Shakshuka
Shakshuka (2-3 ppl)
Ingredients
- 1 onion
- 4 cloves of garlic
- 2 bell peppers
- 1 can of red kidney beans
- 1 can of crush tomatoes
- 4-5 eggs
- feta cheese
- tortilla wraps
Spices & Aromatics
- salt
- pepper
- chilli flakes
- cumin
- chopped parsley or coriander
Directions
- Dice and cook the onion and garlic in a pan with a drizzle of oil.
- Add the crushed tomatoes and cut pepper, then add spices.
- Allow the sauce to come to a simmer, then add the beans.
- Crack the eggs over the mix, then cover the pan for 5 min.
- Top with parsley or coriander and crumbled feta cheese.
