Shakshuka

Shakshuka (2-3 ppl)
30m Middle Eastern beans

Ingredients

  • 1 onion
  • 4 cloves of garlic
  • 2 bell peppers
  • 1 can of red kidney beans
  • 1 can of crush tomatoes
  • 4-5 eggs
  • feta cheese
  • tortilla wraps

Spices & Aromatics

  • salt
  • pepper
  • chilli flakes
  • cumin
  • chopped parsley or coriander

Directions

  1. Dice and cook the onion and garlic in a pan with a drizzle of oil.
  2. Add the crushed tomatoes and cut pepper, then add spices.
  3. Allow the sauce to come to a simmer, then add the beans.
  4. Crack the eggs over the mix, then cover the pan for 5 min.
  5. Top with parsley or coriander and crumbled feta cheese.
