Chicken Fajita Pasta

Chicken Fajita Pasta (2-3 ppl)

Ingredients

  • 1 onion
  • 2 cloves of garlic
  • 250 g chicken fillet (cubes)
  • 1-2 bell peppers
  • 250 g penne pasta
  • 750 ml milk
  • 1 cup shredded cheese

Spices & Aromatics

  • salt
  • pepper
  • paprika
  • chilli flakes
  • cumin

Directions

  1. Dice and cook the onion in a pan with a drizzle of oil.
  2. Add the chicken and cook until no longer pink.
  3. Add the bell peppers and let it saute.
  4. Move the mix to a pot and add the milk and the penne, stirring constantly to prevent the pasta from sticking.
  5. Cook for about 20 minutes, until pasta is tender and the milk has reduced to a thick sauce that coats the pasta.
  6. Add the cheese and mix until melted.
