Mexican Burrito

Mexican Burrito (3-4 ppl)

Ingredients

  • 1 onion
  • 1 can of red kidney beans
  • 1 can of crush tomatoes
  • 500 g ground beef
  • 1 cup rice
  • 1/2 cup corn
  • 1/2 cup shredded cheese
  • tortilla wraps

Spices & Aromatics

  • salt
  • pepper
  • paprika
  • chilli flakes
  • cumin

Directions

  1. Dice and cook the onion in a pan with a drizzle of oil.
  2. Add the ground beef and cook till it turns brown.
  3. Start cooking the rice in a separate pot.
  4. Add the crushed tomatoes with a cup of water, then add spices.
  5. Allow the sauce to come to a simmer, then add the beans, cooked rice and corn to the pan.
  6. Let the mix simmer for 5-10 min.
  7. Serve on tortilla, top with shredded cheese, then roll.
