Mexican Burrito
Mexican Burrito (3-4 ppl)
Ingredients
- 1 onion
- 1 can of red kidney beans
- 1 can of crush tomatoes
- 500 g ground beef
- 1 cup rice
- 1/2 cup corn
- 1/2 cup shredded cheese
- tortilla wraps
Spices & Aromatics
- salt
- pepper
- paprika
- chilli flakes
- cumin
Directions
- Dice and cook the onion in a pan with a drizzle of oil.
- Add the ground beef and cook till it turns brown.
- Start cooking the rice in a separate pot.
- Add the crushed tomatoes with a cup of water, then add spices.
- Allow the sauce to come to a simmer, then add the beans, cooked rice and corn to the pan.
- Let the mix simmer for 5-10 min.
- Serve on tortilla, top with shredded cheese, then roll.
